I think I've come up with a good analogy for people who don't think dark matter is real. It's like arguing that we don't dream. There's evidence for dreams and there's evidence for dark matter. We just don't know how they work yet.

Would this be okay to read? I found it in a cupboard in my house, and have been hoping for something like this but it was written in 1979 (so runs the risk of being painfully out of date)
