How big of a war chest do you actually keep?
For those of you who run a profitable business that pays you and all your expenses AND has money leftover, how much do you leave in the bank before investing elsewhere/expanding/new stuff? Doesn't have to be a dollar amount, if you go by X months business or whatever.

Just a rant: getting paid!
Oh my god! Why is everyone a terrorist when it comes to paying??? This is my biggest pet peeve in working for myself, that nobody feels like they have to pay me on any sort of reasonable time table. I've offered discounts, I've included penalties. People will say, "that sounds great, when can we start?" And I'll say "yeah right away, I just need this invoice paid first" and then they'll go radio silent for nine days! I'm frustrated today, ALL weekend I've been expecting two invoices paid and finally after two days of nothing I've reached out and it turns out one is still "thinking about it" (no they weren't. When did this even happen?) and the other hasn't gotten back to me now for a third day. People man...

Where do I begin on when starting up a restaurant
Hello good afternoon everyone I’m recently new to this sub Reddit but I am currently having a hard time understanding what steps I need to do in order to fully establish my full-service restaurant I currently live in the state of Florida and leasing a restaurant from HOA. I currently have my EIN and my LLC, but I have the previous owner paper work still in his name like his Alcohol license and his department of Business and professionalism regulation division of hotels and restaurant. And his state tax receipt as well as his city tax receipt still under his name and his ownership. I currently don’t know where to start or what to do. Do I need to just transfer the names and ownership to me am I able to transfer his previous liquor license under my name and what else do I still need to do I’m currently in the process of buying you kitchen equipment as well as renovating the restaurant I am hoping to open in the month of May of this year so can anyone please help me.

Independent cafe or franchisee of a global restaurant chain?
I'm considering investing in a location for a small business. The location is facing the highway and a couple of minutes away from a prestigious university campus. As this location (miles of it) was owned by a tycoon, no other infrastructure has propped up to date. There's also an upcoming suburb with over hundred families right behind the location. It's a town in the making, and I see huge potential in the next few years. I've got two options: Cafe - Independence, absolute control. Lesser visibility due to limited advertisement. Franchisee - Stability and brand recognition via national televised advertisements. Lesser control and fractional profit margins. Which of the two would you suggest? Also open to something entirely different.
