Just sold my cosmetics manufacturing business, looking to start a small batch ice cream shop. Any ice cream shop owners here?
I live in a downtown area with heavy foot traffic and no ice cream shop. There are similar towns within an hour drive with very successful shops (consistent 20-60 minute lines). People here are very proud of our local agriculture and farm markets so I was hoping to aim for local specialty recipes using fruit and dairy from local farms and distributors similar to how those succeeding in the 1hr away towns are doing. I have about $200,000 between funds from the sale of my last business and financing. Is there a good way to estimate the margins for these kind of businesses? My only business experience aside from the basics such as accounting, financing, cust service, etc. is with cosmetics manufacturing/ecommerce (mostly operated through contract manufacturers and 3PL)

Damage to an employee's car while driving for work
One of my employees was running an errand for my store the other day when the car in front of her kicked up a piece of tire tread and it hit my employee's car. There was, as far as I know, no one at fault and no one stopped when it happened and the police weren't contacted. I asked my business insurance if they cover this and they said no. Am I on the hook to fix this out of pocket? I don't really want to pay for a brand new bumper but I am willing to pay my employee's deductible on her insurance. I just want make sure she gets it fixed but I don't want to have to pay for the whole thing myself if I don't have to / am not liable for it.
