Miso soyu ramen

I made ramen with chicken broth, miso soyu tare, garlic scallion aroma oil whit beef marinated in the tare, soft boiled eggs, soybean germ, scallions and chilli oil. I suck at plating and I need a bigger bowl but it was delicious.

Good Chasu = Thin Sliced/not fatty?

Been trying all sorts of Ramen places, I typically expect the chasu to be thinly sliced and have a good balance of meat and fat, with soft texture (not chewy) when taking a bite. Recently there’s been a few places I’ve been where the chasu is literally half an inch thick, a bit fatty and chewy (maybe due to the size). Is chasu expected to be thinly sliced and the thick chasu is just bad prep, or is it more of a preference? Thank you and mods, please delete if redundant.
