Niçoise salad prep! (Minor assembly required)
Trying out a Niçoise salad for meal prep this week! I love eating a hearty salad, but I’m rarely in the mood to make them. So I’m seeing if batch-processing the prep makes it more fun. So far, so good. I’m keeping the lettuce and salad dressing separate for now, so they don’t get soggy, and then tossing everything together in a large bowl just before eating. Since there’s a bit of work to assemble (and dishes to wash), I might save these meals for dinners at home, rather than for lunch at work. See photos for recipe. I used hot-smoked salmon and trout instead of canned tuna. And I skipped capers because I don’t love them. (And before you ask, this spread is for two people, for four days. I’m not expecting fish and eggs to still be good eight days from now!)
