Smoked a corned beef brisket over apple wood on my weber smokey mountain @240F for around 5 hours till it hit 203F. Wrapped in butcher paper once it stalled out at 155F. For the sandwiches I followed the serious eats recipe for the russian dressing, and frying the sauerkraut in butter. 100% will be making these again
