Delicious jalapeño cheeseburger popper!
Very simple to make. Just cut the jalapeños in half and make them into a boat (take out the inside seeds and pepper). Cook a pound of beef i season with salt and pepper. Add the beef into the jalapeño boat and cover with sliced cheese (I used cheddar). Then just wrap with bacon and cook at 400 for 20 minutes, flip, then for another 5ish minutes until brown like the picture. So good as a snack that can be separated into multiple containers as the week goes on!

Blueberry Lemon Curd Tart
I cannot wait to try this tonight. I used a recipe from a Reddit recipe posted several years ago; will include in the comments. I added candied lemons and sugared blueberries.
