Sofu is a cross between the cultivars Yabukita and Inzatsu 131. This Sencha by florent_thes_du_japon is quite fragrant with strong floral note and a astringent and umami finish. This tea has power but also can be over brewed easily! It seems that the “Indian” Inzatsu heritage is really offering a totally different more tannic vibe to it compared to many other purely fragrant or umami and sweetness optimized Senchas.
