Wanting to make some chicken salad for the week
Hi meal preppers!! I just recently started a new job, working 8-5 M-F and I’m trying to meal prep for my lunches. I made a chicken pasta dish last week, basically cooked then sliced chicken breast with protein penne pasta mixed with alfredo sauce, chicken bone broth, spinach, sun dried tomatoes, mushrooms, and onions. I made it on Sunday and then ate it every work day, and it was delicious!! I’m wanting to make chicken salad, I’m thinking just shredded chicken, Mayo, Greek yogurt, celery, maybe apples or grapes, things like that. Would that be okay made on Sunday and eaten M-F, kept in the fridge and then in an insulated lunch bag with an ice pack for a few hours? I really don’t want to give myself food poisoning lol. TIA!!
